Hi,
I got my pr renewed. It is valid till May 2017.I still have 3 years left before it expires.I am planning to travel for 20 days out of country.

1) Will I have any problems at the airport while returning or I should be fine.
2)Will they ask me any questions at airport on my return
3)Do I need to carry documentation (pay stubs, employment letter etc) to prove that I have met RO in the 5 year period.

When you have your valid PR Card with you there will not be any problem for re-entry.
The CBSA could ask you questions, which is usual.
Because your absence from Canada is for short period, I don't think carrying any proof for RO is essential. However, it is always safe to keep any such documents, in order to convince the CBSA when any questions arise.
