Can I claim 21 points of experience as SELF-EMPLOYED for PR application

I am in the "tailoring business" for more than ten years. I am planning to apply for PR of Canada.

I want to know:
1) Whether I am eligible to get 21 points of experience ?
2) What documents should I submit to support me as a self-employed businessman ?
3) Being a self-employed businessman as a tailor, how should I express my duties & job responsibilities to the visa officer ?
