i'm in the process of creating my express entry profile. I have nearly 20 years of work experience. Do i have to collect letters from all my previous employers?

Work experience in the last 10 years is considered valid and can be shown to claim points. Anything older than 10 won't be considered.
In order to prove eligibility you need to show at least 1 yr of continuous, full time, paid work experience in your primary NOC, in the last 10 years.
And to claim maximum points in CRS the experience needs to be 3 years or more.
So showing three years of work experience will be enough.
