Yes we have agreed. But would it be better for the host to write it or the applicant? Should they both sign it?
 
Just my opinion, but I would think it is better for you to write it, as the officer may ask you questions. I don't know if there is a requirement for you both to sign it (maybe somebody else can verify), but it wouldn't do any harm. Are you the host or the applicant?

I am the host. I imagine that the host would know better than the applicant on where they would go because the applicant wouldnt be familar with Canada

The applicant.

The applicant is applying for a visa, not the host. She must demonstrate that she has applied thought.... she has decided on what she would like to do when she visits.... and that she has the finances to pay for that itinerary.

No, the host does not have to sign the itinerary
