Hello, I have a question regarding when I can actually start applying to sponsor my spouse in Canada.
For me, I recently got a PR and plan to land in this November.
After landing and staying in Canada for a couple of months, I will go back home and marry with my boyfriend in May next year.
Then, he will apply to come to Canada with either a visitor visa or a study permit visa and reside with me.
I am wondering can I start applying to sponsor my spouse when he comes to Canada
or should I wait at least 6 months then apply to prepare our relationship proof documents?
because I have heard that most people submitted their phone bills, utilicities, renting or ownership of houses, CRA income documents, and etc to prove that their relationship is genuine and have lived together. And, I think that for these documents, you might need some time to prepare...

You need to be married or have lived together for a year before you qualify to sponsor. As long as you are in Canada and can prove that you can support yourselves without government help you can apply anytime. TRV and student permits can be difficult to get once you are married to a Canadian PR.

Because IRCC expects your spouse to remain in Canada, which is not what a TRV or SV are for.

So, my spouse is planning to come to Canada with either one of visas then while studying English or staying in there, proceed to apply for spousal invitation. Will it work?

Study permit to study English will most likely be refused.

As far as I know, if you can proof you are married or common-law partner (12 months live to-gether), you can sponsor your husband/fiance. In another word, you can sponsor him once you landed and stay in-land Canada.
But you need to proof how you can support him and to satisfy the visa officer.

You are right, it takes time to prepare documents, so, plan is a good matter.
