When can I change employer during PR process?

I'm currently working with a employer specific work permit and I just applied for PR using LMIA exempt job offer for the additional 50 points.

In which step of the PR process I would be allowed change job? My guess is after CoPR but just want to make sure.

Yes, you would want to wait until after COPR since you have claimed the 50 points.

You don't have to wait until you have the PR card. Once you land and become a PR, you're good.
 
Due to COVID-19, you may not need to wait until your work permit application is approved to start your new job or work for a new employer if you're eligible. You just need an email from IRCC that says you have permission to change jobs.

They are using the points from their current employer job offer from their current job so they can’t leave until landing
