Hi, I came to Canada on the 16th of November 2020. My visa was approved only until the 31st of December 2020, so I’ve applied for an extension on the 27th of November 2020 until 2nd of February 2021.
Since I can continue to stay on implied status until I hear back from them, i want to extend my stay further to feb 2nd so do I need to re apply or can I continue to stay until I get a response ?
If so then when do I apply for the second time if the status of the 1st is still pending.
 
AFAIK, if you arrived on visitor visa, (irrespective of when it expires) you will get a maximum 6 month stay permit. Unless the immigration officer wrote another date (lesser then 6 months on your passport). So based on that your visitor record of 6 months is valid from 16th Nov 2020 till 6th May 2021. So you don't need to apply for extension of record for after Dec.
Yes your visit visa may expire in Dec, but that is only needed at port of entry. Your visitor record (if nothing is stamped on passport) is for generally 6 months.
You can apply for extension of visitor status, at least a month before 6th May 2021, if you want to stay longer, beyond 6th May 2021.

So my visitor record was valid only until the 31st of December 2020, and I’ve applied for the extension of my visitor status on the 27th of November 2020 until the 2nd of February 2021.
As per my understanding I can continue to stay until a decision is made on the application does that mean I continue to stay post 2nd of February or I need to re apply in order to extend it until end of March
 
If its not possible to make any changes to your current submission, then try to submit any additional documents (maybe a new form and a letter explaining why you want the initial date to be extended) via ircc webform. If its possible to call them, try that as well, additionally.

As long as you have applied, no matter how long the IRCC takes, you are on implied status and thus can stay. Once they have made a decision, you will then have to abide by that decision. So in case you applied till Feb, and they still haven't made a decision by Feb, you can stay (technically) till they make a decision on your application. Of course, if you intend to leave before they have made their decision, so you will still be in the clear AFAIK.
