I have always overstayed in Canada when I told the IO im staying for a couple weeks i stayed like 3 months. but that was before i applied for my PR card

Recently i came 2 months ago to Canada and told them i am staying 2-3 weeks i have been here for 2 months and want to go to the USA to visit my fam for thanksgiving. they only stamped my passport with the regular stamp like they always do.

Will they ban me from Canada for kind of overstaying even though i didnt get a visitor record (i dont know what that is exactly)

It doesn't sound like you overstayed at all. You said you are a US citizen and they give you the "regular stamp". That regular stamp defaults to a maximum stay of 6 months. Unless the officer at the POE has reduced that amount of time (may be hand written under the stamp) you have not overstayed unless you stayed more than the 6 months.

What you have actually done is lied to the CBSA officer. Don't do that again. There is probably no record of it so it won't hurt you moving forward but given that you have a PR application in process, it's a practice you want to stop now. When you come across again, be completely truthful when answering questions. But answer only what is asked. If you are going for Thanksgiving, take a copy of your application for PR, fee payment receipt and file number (if you have it) with you as proof of the application. It might come in handy.
