I'm going to be arriving in Canada on a NAFTA visa. It is my understanding that Canada considers me a temporary resident, and as such, I am not required to get a Canadian driver's license, plates, or insurance. However, my auto insurance company states that my coverage is not valid for visits lasting longer than 30 days. I have also spoken with a few other companies, who have told me the same thing.

Is there US company that will cover my car while in Canada for more than 30 days, but with US (NC) plates still on it?

Will you be maintaining a US residence while in Canada or are you breaking residential ties with the US? If you have no US residence you probably can't keep US insurance, US Plates, or a US driver's license for more than a brief transitional period. You also need to be aware of the provincial law where you will be staying. You may be required under provincial law to register you car there, get a driver's license, insurance, etc.--Canadian federal customs law on temporary residents notwithstanding--which would probably require you to import your vehicle. It can get really confusing.
 
In most provinces, your US license won't be enough after you've been in Canada for more than 90 days. You should read up on these rules.
