Hi team,
We are going to apply for my new Zealand fiance on the common law partner visa but have a couple of questions:
1) if he comes into Canada on a visitor visa, what happens when that validity elapses?
2) he took the medical examination in November, would those results still be valid? Or would he need to retake test?

1) Are you applying inland or outland? If you apply outland, which is way faster, than he needs a valid status in Canada. He has to either leave Canada or apply for a visitor extension 30 days before his status expires. If you apply inland I would send a visitor visa extension as well.
2) The medicals are valid until November 2014. If you get lucky the VO will extend his medicals. Otherwise they will request a re-med.

Have you lived together for 12 months already or are you just starting? Make sure you collect a lot of evidence like joint lease, joint bank account, joint, insurances, change your status with CRA after 12 months etc.

We will apply outland. Does visitor visa count for the valid status in Canada?

Yes, it is a valid status.
