Of course they do. Through the travel history they will know if you are financially capable to travel and you never overstayed in a country you visited. The entry/exit stamp and visas will be the proof (need to attach on the Travel History category). On the application form you need to declare the list of the countries you've been to with matching date and purpose of visit.

Hi k.h.p.

I hava silly question concerning the travel history. As I traveled to Canada from China with vistor visa last month, the officer didn't stamp on my passport at all. For most of the record are electronic now, it looks like that hard copy alone can not review one's travel history. Do you have any clue about it?

You still need to provide dates. Canada will verify your entries into the country based on the records they have of your passport - you scanned your passport at entry.

Assume that is the same with other countries.
 
It should be ok. Better if you have e-tickets with your email/name on it. At least you can prove that they really belonged to you. Also pictures to landmarks on the country where you've been to. On the Letter of Explanation (cover letter) indicate that you lost your old passport that is why you are submitting tickets and pictures as proof of your travels.
