David Cohen's people have said to me that "any documents not originally in English or French must be accompanied by an original, notarized/certified translation." Where can my wife get this done in Mexico, and what is the name of this type of translator in Spanish? Also, what documents do they want in English? Off the top of my head, I would say marriage certificate, custody papers, anything else? Thanks.

Check the guideline for which documents do they want, and what need to be certified/translated, because it depends on each region.
If you're translating for example some emails between you and your wife, you can do it yourself and add a note on it. But official documents need to be certified.
Your wife can get it done in Mexico, as long as it is a certified translator.
