Can the applicant and/or sponsor do the translations themselves? How do we get the affidavit needed? Do we need to certify it? Does it still have to be a judge/notary, etc?

I'll be sending the original letters btw. Or do I need to send just photocopies?

Note: The documents I need to translate are emails/letters to each other, not birth/marriage certs
 
It states in the guide that family or friends cannot translate documents. For e-mails and the like, I'd go to a translation company. I don't think you need to have them notarized.

Make sure you include the originals with the English translation.

As for cards / letters, you don't need to send originals. The chance of CIC asking for them is quite low. I'd also include an explanation stating why you haven't sent the originals, though my guess is that the VO will understand why. If they need to see originals, they will request them. No big deal to send them later.
