informed Citizenship and Immigration Canada that my current marital status has been changed from ‘Single’ to ‘Married’. But, for now I don’t want to start my Spouse’s Permanent Residence application process with my current application. Instead of doing this, I will apply for her permanent residency application after my permanent residency application is approved.

Shall I able to do this process? And if I can do it then can you please tell me how can I do it?

yes, you can list her as "non accompanying spouse"
 
don't pay the fees if she is not coming. You'll be able to sponsor her later (and pay the fees then)

I don't remember the forms... too long forms.
I think when you list your family members, there is a chance to set them as non accompanying
