Hi my wife and my child are coming to Canada, I sponsored them, but unfortunately they don't know English yet. How to help them to go through the procedure at the airport? - I mean with immigration officer. Is it possible to write down on a paper all the important information like: their adress in Canada, they are at good health and ... I don't know what else will be usefull info.. Please give me an advice. Thank you.
 
What language do they speak?

They have translators for some languages.
 
They speak Bulgarian, is it good idea to write down on a paper some usefull information in English for the IO?

Yes that is a good idea. Also include your phone number.

What airport are they landing in? I know some, like Toronto Pearson, is well staffed with many multilingual staff. They cover quite a bit of languages.
 
Yes, write info for her in English. You should be at the airport too. Include in the info your cell number and that you are at the airport waiting for them. Maybe the immigration officer will call you to help.
Also try phoning the airport they will be landing at and asking about what will happen, if they have interpreters, if you will be allowed to help, etc.
