I am a tradesman looking to sponsor my spouse into the country, but because I work in the construction industry I have multiple jobs a year. Do they want the last ten years of information on each job, or can I write that I have been employed out of a trade union for the past ten years (and subsequently attach a verification letter, should they require, of my membership and how I am in good standing). I'm really hoping I can say I was at the trade union, because that's a lot of tax forms I have to go searching through to find my proper employment history...

They only need NoA / Option C for the year previous. That sounds like the form the Principal Applicant (your spouse) is to fill out...
 
It's for my Schedule A background declaration, as I am the one who is sponsoring my spouse. And it has room for a few entries, but honestly I've had probably 20+ jobs in the last ten years, so I need to know if the fact that I have been working within a union is enough, or if they need every company I've contracted to...
