Hey there,

My mother is applying for the Spousal sponsorship family class immigration for my father. She has limited income, but both myself and my brother (Canadian citizens) have large income (above 6 figures each). Can my brother and I become a 2nd or 3rd sponsor additional to my mother in application?

No - your brothers cannot co-sponsor. Note that there are no minimum income requirements to sponsor a spouse.
 
Hi. As long as she is working and not on social welfare, there is no extra evidence required to prove that she can support herself and your dad.
 
The question is: could she support both herself and your father on her current income?
 
For a spousal sponsorship, there is no income requirement. It is very rare for a visa officer to refuse the PR visa because he or she does not believe the sponsor can support the PR, but it happens (very) occasionally.
You and your brother cannot help sponsor your father, but you can write a letter or an affidavit stating that you will be providing your parents a place to stay, or will be giving them money, or whatever. Your mother can then include this in her application.
