I have a lot or relatives (Aunts / Uncles) in Saskatchewan who can support me and my family.
My spouse's line of work is in Information Technology which makes his occupation more eligible for a Canadian Immigration application.
My relationship with my Aunt / Uncles would make my husband a nephew-in-law. I would like to know if we are eligible to apply for the Family Class Sponsorship with my husband being the principal applicant?

I don't think family sponsorship works for you. Perhaps you should really consider your spouse (being working in I.T.) to apply for the Skilled Worker / Professional Immigration stream.
 
In Saskatchewan, an aunt or uncle can sponsor you under PNP. If you look at their application guide at http://www.saskimmigrationcanada.ca/appguide-family-members/ it says that "in-laws of the same relationship" can also sponsor so if you don't meet the requirements to be sponsored but your husband does, you can give it a try.
