I am a British citizen and my father is in the process of sponsoring me for my PR.
My query is, can I stay in Canada whilst this is being processed?
I can live with my father and stepmother and he is happy to support me financially until everything is finalised.
I am in Canada currently visiting on a y month visitor visa.
Can I renew this time and time again until I have PR?
Is there some kind of bridging visa I can apply for?
Do I need to be in my country of citizenship whilst my application us being processed?

Advice would be greatly appreciated

You don't need to leave Canada. You can apply to extend your visitor status.
