hello everyone, would really appreciate if anyone could assist me.

I am a permanent resident and would like to sponsor my wife. But I’m currently working remotely from outside of Canada for a Canadian company (paying taxes and getting paid in my Canadian bank account) is it possible for me to sponsor my wife from outside of Canada or do I have to be physically present in Canada to sponsor her.

You must be physically present in Canada. Unfortunately you'll need to wait until you have moved back to Canada before you'll be able to sponsor her.

Make sure you meet the residency requirement at the time you apply to sponsor her and note that the time spend working remotely outside of Canada will be counted as time not in Canada and cannot be credited towards RO.

As noted , I’d seriously check to see if you’re compliant with your RO
If you originally landed in Feb 2018, and only stayed a couple weeks, then left , and never returned, you may have a problem

Are they not making any exceptions during this pandemic considering living in isolation wasn’t easy so I decided to move back

There are some exceptions being made to specific rules. However this isn't one of them. You'll need to wait until you have returned to Canada before you'll be able to submit the sponsorship application.

Note that in some cases you can count time spent outside of Canada towards RO. Working remotely for a Canadian employer outside of Canada unfortunately does not count and will be classified as time spent outside of Canada.

Note that the expiry date of your PR card isn't really relevant to the RO calculation. RO is calculated from the time you landed in Canada. So if you landed Feb 2018, then you need to have lived in Canada for at least 730 days by Feb 2023 to meet the residency obligation.
 
I actually left in Dec 2020 and was in Canada for about 10 months

So you need around 14 more months to meet RO. Assuming you did in fact land in Feb 2018, that means you need to move back Nov or Dec 2021.
