I know that a PR holder sponsor has to stay in canada till the application goes through. Can the sponsor leave once i receive passport from embassy or has to stay in Canada till i finish the landing process ?

If you have not landed yet and you decide to leave you could risk the chance of not getting back in.Then the whole application is gone to the dumpster.Your a PR and you are sponsoring someone?Or you the sponsored and you did your app inland you have not got your visa yet or passport back from them and your wondering if you can leave?If they still have your passport how can you leave and get back in ???

The OP is asking about a permanent resident sponsor leaving Canada during processing, not about an applicant leaving Canada. I think it's safe, once the COPR has been issued, for the sponsor to leave Canada . . . perhaps to join the sponsored partner and accompany them back to Canada for the landing?

Well let me re write my question.

My situation

Sponsor - My wife, PR holder , currently in canada
Applicant - Me , currently in Japan.

Once i get COPR , can my wife leave canada and come to japan help with packing my stuff and we fly back together ,do my landing , without risking the whole PR situation.

@manachinu

Yes, yes. You can do that. Remember, just as long you already have your passport with visa stamped and COPR. You're good to go. Your wife can pick you up.
