My significant other and I are planning to apply for common-law together. However, the sponsor (my girlfriend) is currently in medical school and is a full time student that is currently using grants, student loans, and a line of credit to pay for her expenses. Are we still eligible to apply? And if we are eligible, what would we put under supporting documents for "Proof of Employment" and/or "Proof of Income". Thank you

Well, is she is a Canadian citizen or PR would be important.
If she is a PR then she will need to be in Canada for the duration of your application process - is she studying in Canada.
For Canadian citizen's there is usually no income requirements, and they are eligible to apply when living outside Canada expect for few exceptions that are detailed on the CIC web pages. I guess she can put unemployed and give an explanation that she is in full time study, detail the program and the University she attends. She would need to add some proofs to this (letter from University stating the above etc). She can also share a plan on what she plans to do after she completes her studies. If she has a Notice of Assessment from any previous employment prior to when she enrolled for her program, she can add that too.
To add to that, she can also talk about your qualifications and employment capabilities once you are granted PR, and both your plans to support yourselves when you come to Canada.
From what I can gather, sponsor income is asked to ensure they are not on welfare and to see how a person plans to support their spouse/dependents when they come to Canada. More senior members can contribute to your question and give you some more feedback. If you are applying in a category other than spousal (as you have mentioned girlfriend and are not married) - assume you will be applying as Common Law?

Thank you so much for your help! Yes we are planning to apply via outland (United States) common-law together. She is a Canadian citizen and doesn't have any plans to leave Canada except for one month for a program she will be attending in Vietnam.
