I have joined a Canadian company which are processing my work permit. They offered me professional engineer job. I can be their employer when I land in Canada but not before that.
I currently opened a sole proprietorship company and signed a contract between that Canadian company and my sole proprietorship.

Does that give me Canada experience which can be used in CEC (i.e. my sole proprietorship experience .. before I land in Canada and join that company as normal employee) ?

Once you are in Canada with your LMIA and closed work permit, you can start accumulating Canadian work experience. You must be IN Canada.
