To prove our relationship with my wife, I know it is better to include e-mail and chat logs and also facebook page showing who I am married to.

However, neither I nor my wife, have their full name on our e-mails, skype user name or in our face book page. We, like many others, use a version of our names in these.

Will that be an issue when we include printout from these to prove our relationship?

yes you should include those print outs, they can understand that we dont use full name for social network profiles.

no that won't be a problem most of us don't use our full legal names.....

we didnt use our full name in facebook as well, theres no problem coz i already received my visa..
