Your probably classed as 8612 Gardener helper, NOC level D unskilled. You can apply for a new 2 year IEC visa if you want. See: http://www.canadainternational.gc.ca/ireland-irlande/experience_canada_experience/index.aspx?lang=eng&view=d
Your partner's employer could offer her a permanent position once she becomes a PR. With that in writing, if she qualifies she can apply under Federal Skilled Worker arranged employment. http://www.cic.gc.ca/english/immigrate/skilled/apply-who-employment.asp
