I'm from the Philippines, married to my American husband. We're planning on staying in Canada while I wait for my CR-1 visa (which takes more than a year) to go to the United States.

What are the processes like? What kind of documents will the Canadian immigration need from us? Any help will be appreciated. Thank you!

You apply for a visitor visa. All information on the IRCC site. To get a visa, you need to show funds, ties to home country, travel history, reason to travel. CBSA determines how long you can stay but the max is 6 months.

It sounds like you are looking to live in Canada for one year or more.

That's really not possible to do with visitor status. Visitor visas are intended for short term stays (i.e. six months or less). This applies to your husband as well. Americans can't simply live in Canada.

Does one of you have a job offer in Canada and a work permit? That's really what you would need to aim for in order to be able to live in Canada for a period of time.
 
Thanks for your input. We have no plans to live in Canada, we just want to lessen the time we are away from each other.

So you plan to be in Canada for less than six months?

If so, you apply for a TRV. You will want to show strong ties to your home country (e.g. employment, property, assets) and show you have the funds to pay for the trip. Ideally you should also have previous travel to countries requiring visas like the US or UK to increase your chances of approval.

Why doesn’t your spouse just go to the Philippines to be with you ?
They can extend their stay

Probably be a lot easier that you applying and saying the only reason you want to be in Canada for such a long time is too wait out a CR-1 processing.
Canada isn’t like a Drs office where you can just wait things out
