Hoping someone can give some insight.
When traveling between provinces in Canada- moving from one place to another- where are you a resident of while in transit?
For instance, if you move from Quebec to BC by car, and it takes 7 days, where are you considered a resident of on those days? The province you left or the one you are driving to?

Wherever your active home address is. Residence in governed by the province where you live.

In what context is this question being asked given for sure you are not resident in any province between Quebec and BC but in my opinion you could say still resident in last address in Quebec until you arrive in BC or simply assume residency in BC the day you leave your Quebec residence. Depends in what context the question is being asked.
 
What if you had no active address? You left one address and did not have a new home address until you arrived? Where would you be a resident of in that in between time?
What context would make a difference to the situation?
How would I go about looking up cases that set presedent in this type of situation?

The one you left. So you are considered a resident of Quebec for those days. You wouldn't be a resident of new province until you actually set up a new residence there.

i.e. if you need healthcare during your trip, it will be Quebec paying for everything.
