How long is it taking these days to get the PR Card renewed?

Second, I have more absecences than spaces provided in the renewal form - should I print the same sheet again and list the additional absecnes there OR should I create my own sheet and list absecnes there?

Use another blank sheet of paper and refer the question number from the original form and mention it on the blank sheet of paper and mention the details accordingly.
