I have been told that my mexican passport is linked to my canadian PR Card, I am in Mexico at the moment and my passport expires in one month, can I renew it here and go back home?

Of course. Passports expire and get renewed all the time. It IS wise for you to also carry your original passport with you. As long as you can prove you are a PR to the border officer, she or he is legally obligated to admit you to Canada. See ENF 4 "Port of Entry Examinations" for details.

Interesting - the US does not keep your expired passport. I've had cases where I have live visas in an expired passport, in which case I present both to a visa officer.
