When submitting the app, which would be most convenient? Mail or Courier?

I sent via Canada post

A courier is usually more reliable than Canada Post. I used UPS and was glad I did. It was a bit cheaper than Canada Post and I didn't have to worry nearly as much that the package would get lot or delivered late.

We sent ours via Canada Post - but Never again. We sent it Priority and was delivered 3 days after the promised day... My history and trust of Canada Post is not very good. I will never use them again for things this important. Too risky. They've completely lost 2 items of mine in the past - never to be found.
Courier is more reliable - in my experience.

I used a courier (FedEx) because I wanted to overnight it and get a signature. My application was about 3 lbs and it cost me $35. I think Canada Post quoted me around $28 and 2-3 days shipping time, so it seemed worth the extra money to courier it. I dropped it off at FedEx around 10 am on Thursday and it was received by CIC at 8:30 am Friday morning!

Along with alot of others, I've went the courier route.

we sent ours by courier so we had some evidence it arrived at the CIC :)

Exactly what we did! Better to have some proof.
