Yes, it is acceptable as long as the Reference letter has all the information mentioned on it such as your job title, duration of your job, salary per annum and job responsibilities/duties.

Thanks guys. Actually one of my letter is signed by assistant HR manager. I hope it is acceptable, Right?
 
You have one, I have two letters from my previous two employers issued and signed by the HR head/Manager.
This is because in both the cases - my reporting managers did not have the authority to issue and sign such letters as per company policy.
So, this is 100% acceptable.
 
What if you own the company? Obviously you can't sign the letter for yourself. Would it be acceptable to have HR or another manager to sign it (although technically you are their boss)?

Well, that can be part of it, but you need additional documentation, and letters from clients are good.
