I recently filed my PR application (outbound) and my visitor extension is almost up (need to leave the 28th of December). My husband(sponsor) and I planned to go to New York for Christmas and I am wondering if when I re-enter Canada can I just show my PR application to them in order to have an easier time?

Yes, show the border officer any proof that you have a PR in process. If you have a UCI# that would be good, also your receipt for PR. You shouldn't have a problem. Just let them know you want to "visit" Canada while you are waiting for your PR.
 
It really depends on the officer at the border. If he/she wants to be an ass, you can get denied entry. There are no guarantees, obviously. Having an application under way is always good. All you can do is bring proof that you've filed and be ready for anything they might throw at you along the way.
