I came to Canada in Oct 2019 on a work permit ( LMIA ). The on Sep 2020, less than a year after landing, I got the invite to apply for PR through Express Entry. On Dec 2020 I submitted my application.
However, I have not received any updates on my profile after 8 months, except the medical results being passed on Jan 2021. So my questions are:

1. Does this mean that because I was not eligible at the time of receiving the invite ( less than a year in Canada and aiming for Canadian Experience ), my processing has not started yet?
2. How can I make sure I am being processed under the Canadian Experience Class and not the Federal Skilled Worker program. I remember that the EE process found CEC for me but I'm not sure if FSW was also an option or not. How can we find out under which program our application is being processed?

1. No, it doesn't mean that. Everything is taking longer right now. As long as you submitted your complete application after you completed a year of working in Canada then you are fine (which it looks like you did).
2. The ITA you received would have specified which program you were invited under. The program you were invited under is how your application will be processed.

Another odd thing that happened is that the processing time weekly update on the website jumped from Nov 15-21 to Dec 13-19 and skipped the date I submitted my application. What does that mean? I also order GCMS notes on July 4th and guess what? no answer from IRCC

I honestly think you're overthinking things. Everything is unfortunately super slower right now. Tons of people who applied in 2019 are still waiting. There are many active threads here where people are sharing timelines and you may find it helpful to join discussions in one of those.

You should receive your GCMS notes soon.
