I have been studying or working and living in Canada since I was 18, why do I need to provide proof of funds from my bank statement for immigration?
I hardly have ever kept a balance more than $1000 in my bank and my credit card is maxed out since years,

I have paystubs from my current employment where it is more than $4000/month - is that going to be enough? Should i Pay my credit card in full before submitting this?
 
Unless you are invited under the CEC program or you have a valid job offer you must provide POF.
 
I have a Job Offer/LMIA & am currently working in NOC 0 in Calgary.

But in my application , it is still asking me to add documents for proof of funds.

That's because you stated an amount other than $0 in the "how much money you'll bring to Canada" question.

Either change this amount to "$0" or upload a letter in the POF placeholder stating that you have a valid job offer and thus, no POF are required.

I have a very specific query: I have enough bank balance to show for my application but in the last 6 months, there have been instances where i did weekend part time jobs for which i was paid cash 300$ per weekend. Does CIC ask for proof income for that too ?

I already have an ITA, can I go back and change the amount I will bring to Canada to $0? or Decine ITA do it again? or Just a letter explaining it would be fine...?

These amounts are quite low so it shouldn't raise red flags like a big lump sum amount would.

Nevertheless do not forget about including such jobs in the personal history section.

The simplest approach is to write a letter and to upload it in the POF placeholder.

Even if you change the amount to $0 now (which you can) you would still have to write a letter but instead upload it in the LOE placeholder.
