Can I use my girlfriends mothers bank statements, and the mothers partner's bank statements as a proof of funds?
 
Only if they write a letter saying that they are supporting you, I suppose.
 
I am not saying it would work for sure.

But if you want to use other people's money as your source of support then those people need to make that clear to CIC. They need to write a letter (getting it notarized might be a good idea) saying that they will pay for EVERYTHING you might need while you are in Canada. If I were you I would also get a copy of their paystub to show how much income they have, and printout of their bank accounts to show enough savings to support you.
 
You should tell the truth. If your family is paying for you to be in Canada, then that's what you have to say. If your girlfriend's parents are supporting you, then you say that. Stating something that isn't true to CIC can be classified as misrepresentation, and that's serious. I'm not sure what the full consequences would be but for sure they would deny your extension.

Don't complicate things, just tell the truth.
 
Ok but I have multiple people helping me when needed. Like if something went wrong my girlfriends moms partner would help , but we will have enough money for me to stay as the house is fully payed and things like that

"verbal or written statements, which can be confirmed, that satisfy an officer that sufficient financial support from friends and/or family is available and has been arranged to adequately cover all reasonable expenses to be incurred during the stay in Canada"

Ok since I will be with them I will have no living expenses myself besides food which they will provide, should I add that as well?

Your living expenses are not free. Someone is paying for you. So it should be clearly stated in a letter from the people that are supporting you that they are paying for EVERYTHING. Like I said before, include paystubs from these people and bank account showing that they have enough money to support you. And yes, from everyone who is supporting you.
 
Well they don't save much but they definitely make enough to support me, they spend money on random things a lot so it worries me because they don't save. But the pay stubs would look very good, is that okay even though they don't save much?
