I just received my Invitation to Apply for PR Visa to Canada last month (after 2 years of waiting), and currently gathering/completing all my requirements. I am a single parent (separated) with 3 kids. I don't have any relatives in Canada, only friends.

I know it will be tough to establish myself in Canada and look for work with kids under 13 years old, so I am planning to leave my kids with my parents in the USA.

Question 1: I am planning to apply for a US tourist visa for my kids (I have multiple entry). If granted, I am planning to leave them with my parents, then I will enter Canada alone from the US with a PR visa. Will that be ok?

Question 2: If I will be entering Canada with a PR visa alone (without my kids), will that mean that the proof of funds I will be presenting to the consulate will be for myself only? Because I was advised that I still need to present proof of funds for a family of 4.

You need to show proof of funds to cover yourself plus all of your children who are under 19.
 
That's really a US immigration question. And it depends how long you plan to leave them there. Keep in mind that a US tourist visa only allowed them to visit the US - not live there. If US immigration thinks they're coming to live there - you might have issues at the border. Also, I don't believe they'll be allowed to attend school.

So, can I enter Canada (1st landing) from the US?
 
Yes - you can land from the US.

Several months is a long time to leave your children in the US. I would make sure you have a back-up plan in case you have any issues having your children stay in the US that long. Note that your children will have to enter Canada (land) and become permanent residents before their PR visas expire.

1 year from the date of your medicals or the expiry date of your passport, whichever is earlier.

You're misunderstanding. It won't be a year. It will be a year from the time you complete your medicals. So it will be definitely less than a year and it could be less than six months.
