Guys, I'm trying to find out if the experience letters that I got would be enough for my FSW process. Here's my background:

NOC 2132 - Mechanical Engineer (2 companies) - all foreign experience
SEP/14 - OCT/16 - 37 months - First letter, here I think I have nothing to worry about
NOV/16 - NOV/19 - 36 months - I'm claiming points for that experience
DEC/19 - TODAY - same employer as the previous one, but I'm not claiming points for that experience on my profile

When I completed 3 yrs of experience, I requested to my boss to get a letter, because I knew he would be leaving the company later on the year. Since he was leaving, I was totally honest with him, and explained I was trying to immigrate, so he didn't hesitate to provide me the letter.
After he left, I got a new boss, with whom I continue to work today. Yet, I don't think I would get a letter now as easily as I got with my previous boss, or without raising flags about my intention to immigrate (therefore, to leave the company).

My main question is: since this is my current employer, would IRCC demand me to send an updated letter stating that I work there today? Or the letter from Nov/19 would already be enough?

My secondary question is: Theoretically, with the first company I would already have enough points (3+ yrs of foreign experience). Would it be safer to simply remove the second experience (2014-2016) and only get points for the 2013-2016 experience? (either way, my CRS wouldn't change actually)
 
The work experience only needs to be within the past decade, not current.
Sure, but even if the work experience was obtained in the same company as I'm currently working? Wouldn't IRCC request an updated letter showing that I still work there, for example?
