How long has it taken for people to get their PR for spousal sponsorship? I'm trying to get a rough idea of my plans to move back home to beautiful Canada.

Your question is too general. Processing times vary wildly based on the visa office. You'll need to tell us which visa office you'll be applying through.
 
I'm in the U.S., so I don't know if that gets handled through the offices in NY or Los Angeles or in Ottawa.

US = Ottawa = 8-10 months for a straight forward application.
NY or LA is just in case it needs an interview.

I just landed and we had a straight forward application. No dependents since they are all adults over 19 and no other issues. It took our application just over 10 months start to finish.
 
Do the times reflect the day mailing the entire packet? Say sponsor takes 60 days and then 8 to 10 more months or is it 8 to 10 months from the day you send packet? Ty.

60 days + x months.
Those 2 stages are independent.
 
Mine was done, from mailing to landing, in just a touch over 5 months, including getting a CSQ. It can be extremely fast, depending on your situation.
 
I want to get to Canada by end of next year....if that's possible. Waiting on police clearance.
