I had a stroke 2 years ago and lost the ability to remember things. I have since regained my memory.

So, what if that had happened during the time for my renewal? I wouldn't even have been aware it needed done, and Hubs was so caught up in helping me to recover, he wouldn't have remembered either.

What happens in a case like that?
 
So would depend if you were in Canada or outside Canada given you really only need a valid PR card if you plan on leaving the country at any point, a valid card or PRTD would be required to board a plane back.

Some people for whatever reason never renew their card and let it lapse as they have no plans to travel. As long as they are able to demonstrate they continued to meet the residency obligation even having a lapsed card they can still renew at a later date , which would apply in your scenario.

Absolutely! Or not renew at all. There is absolutely no requirement to have a valid PR card unless you intend to use commercial transportation to Canada.
