My spouse has money in a postal office account which was untouched for several years,is that accepted as a pof
 
As long as it can be liquidated, yes.
 
Yes Post Office can give a letter.

When you say Post Office Money, are you based in the UK? Post Office Money in the UK is managed by Bank of Ireland. You can get a fixed savings statement as they are cash savings. In my case, I am showing funds in my name in a fixed deposit in India and funds in my wife's name in her UK ISA account. These are cash deposits and are acceptable.

I am talking about fixed deposit money in the egyptian post office but its not a strict financial institution

As long as your banking institution is officially recognised in your country, it is fine.

I just checked with them and they gave us one year bank statement and a bank letter stating my spouse name,account number and available balance,the letter doesnt have any contact info for the post office and they refused to give the account starting date,will that be accepted or what should i do
 
You could print out the contact details from the website and submit that. Do you have a "welcome to post office" email.

I can do that and print their details,and no i dont have any emails from the post office,also what about that the opening date is not mentioned?will it be an issue
