Jobs from your previous experience don't need to be permanent. they needs to be full time and continuous.

CIC defines "full time" as 30 or more hours a week. If your experience letter mentions 30+ hours, it should be valid.

Full-time I have heard but permanent only for the current job I guess.

I am not including current job in my work profile anyhow

The permanent bit is/was only needed for LMIA job offers. It isn't needed in your ref letter, unless you want to add it.

You will need to confirm the start and end date of employment and how many hours you worked per week, at minimum :)
