I was in canada 10 years ago,got a visa for 1 month and stayed there almost 2 months.
now I want to start immigrating process to Canada, maybe by job offer or simple immigration to province,or the federal program.

1 .Is my overstay can stop me probably I should fill some documents,do I have to write that was overstay for 1 month, or somehow not saying it, to lie and
say I was there one month under the terms of the visa, and to hope they do not check my passport stamps (by the Arrivals stamps).

2. If you ask to extend your visa while you in Canada,do they call you with your passport for a new stamp, or just updating it on their computers

CIC asks for your passport and gives you a new stamp.

regarding number 1, i don't think the previous overstay will affect your immigration application, but don't assume that they can't find out - as your overstay was in canada itself.

At least the FSW forms don't ask you directly - if you have overstayed a visa or not...but you need to disclose your travel history since age of 18/ or the last 10 years whichever is most recent...if your overstay was more than 10 years ago - then the forms are not asking about it.
 
It's worth noting that the London CHC has now starting asking for ALL your travel history from age 18 and is often ignoring the "last 10 years" rule. This may spread to other visa offices... Nobody knows why. I had to supply 38 years of history >:(

Should I write the right dates and take the risk being rejected, or to lie and write a date so it 'fit' the Visa rules and take a chance they wont check it in my passport ?

in my opinion...write the past 10 years only. If the visa office requests more details (i.e. since 18), then write the correct details and have an explanation for that if asked about the overstay.

Visa overstay will not result in you being inadmissible to canada, but "mis-representation" can.
