Hi I am a canadian citizen living in london with my American wife. If we start with an Outbound App and she stays here in London until it is approved is there anything i would need to do if i want to go and get settled in canada while her app is being processed? Do i need to notify Canada of my change in address ?

Well part of the process of applying outland is showing intent to move back to Canada when PR approval comes through. The fact you are actively taking steps to do this can only be positive. If you get a job or buy a property, get a lease etc these are good things to include in your application as these show definite intent to move back to Canada. I doubt there would be any need for you to change your address as CIC normally communicate through email. If your wife was to move back prior to getting the PR then obviously change address then otherwise her COPR would be sent to her address in London.

I was thinking that in my case I would not be able to show any proof of intent to move aside from letters from family in Canada saying i could stay with them.

But i do plan to move there first while my wife stays behind in London but all of these steps would happen after we mail out the application as funds are tight and the cost of the application is so expensive i will need to save up some money before i leave london. I just wasnt sure if i should update them on my application when i do buy the ticket to show proof or is to late once the app is mailed out. If not can i email them to udpate them or does proof need to be mailed only.

To be honest I would just include letters from the family and you can also include any emails or correspondence about jobs or anything that would show you are going to re-establish in Canada. A good description of what you plan to do once your app has been submitted will also help. Dont mention time lines in your application however, as CIC have been known on one occasion to reject an application because the couple discussed a detailed plan based on the processing times and their expectation of PR approval. In terms of updating CIC I personally wouldn't bother unless they ask for it. If CIC want more information or evidence they will contact you and let you know.
