I sponsored my spouse, he is out of status. Our application was sent March 2017, currently in the background check part.
We have a trip booked for a wedding where I am in the wedding party. Wedding is April 2018. Likely we won't have an official PR card by then but potentially could have a confirmation of permanent residence letter. Is there anyway he can travel, or should I switch the trip to my friends name? He is from Mexico, our trip is to Mexico. Hoping for a miracle.
 
He'll have no problem leaving - the problem may be coming back. If he has his COPR - returning will be no issue. If not, he'll need to apply for a TRV to return once he's in Mexico. If he's out of status in Canada, then it may be quite challenging to obtain a TRV.

I assume he's applied outland rather than inland?

We are inland applicants.. CPC Mississauga. So it would be okay to re-enter with just the COPR letter and not the physical card? I was trying to find answers online, I thought he would need the actual card

OK - in that case your husband should certainly not leave the country until the process has been completed and his application approved. He will not get a COPR - he will get a landing interview. He can leave after the landing interview. However to return, he will need either a valid PR card (which won't be ready in time) or he'll need to apply for a PR Travel Document once he reaches Mexico (which can sometimes take a few weeks to process).
