Do you have to put the originals with the package or would photo copies be acceptable.

For our spousal sponsorship, we put in the original(s). You could keep the copies for your records.
 
Look at the document checklist (IMM 5491). It clearly states

An original "Option C Prinout" of you and your cosigner's last Notice of Assessment for the most recent taxation year

My document check list is IMM 5771 (12-2013)

Does not say "Original" just a print out.??

This is for sponsoring parent(s) and grandparent(s) correct? I am not familiar with that type of sponsorship but go with what the checklist says.
 
Just send in the page that you got in the mail, it does not say "original" anywhere on it. At least not on mine :) The "Option C Printout" is what the document is called but you must give them the version you received from the CRA, not a photocopy as photocopies can be easily altered.
