As per my understanding the way it works
The Indian post handovers it to the postal carrier (most likely EMS network). Then once it lands in Canada it goes to Canada customs. Canada post authority have no control over customs. Your packet may get cleared in one day or in 30 days, no control. The reason is when you send it through India post you are not declaring what are the contents inside. Also India post do not take any responsibilities of the contents inside e.g. currency , passport, what type of document or any other probihited items inside.
Whereas in case of private courier some basic responsibilities lies on the courier. They should declare what is inside at the time of receiving the document. The private courier may have seperate custom clearing points in Canada and are responsible for that. Hence it takes only 5 days
