So I got a new letter of acceptance from the same school as I asked for a deferral.
I heard that I need to upload my new LOA to my IRCC account.
Will my "letter of introduction validity" be extended based on my new dates written on my new LOA?

LOI is nothing but showing that your study permit is approved and you can travel to Canada, no need to extend that. Only your Visa and Study Permit matters. At the immigration, you will be asked to provide your LOA and your Study Permit will be in lined with your new LOA. As far your Visa is concerned, you will have to lodge a new TRV application for that.
