Hey man, I truly am sorry that you're in this situation. I completely understand your reasoning for not considering marriage just yet. It's a big freaking deal, after all.
I would definitely consider either:
Proving you're in a "common-law" marriage,
Applying for her visitor visa and extending it in order to get more concrete proof of common-law,
Getting her to study in Canada, get a PGWP, etc., OR
Finding a job for her here.
I'm not an expert by any means. Speaking to an immigration consultant who is registered with and licensed by CIC is a good idea just so you can formally have your options laid out for you and you'll know for sure that you aren't missing anything.
