My parents are Indian nationals and currently living with me in Canada with a super visa. My parents have to attend the wedding in India. Can they go to India for the same for a week or two and then come back to Canada without any issues? Thanks.

There isn't a black and white answer to this question. If and how long they are allowed back into Canada is always up to CBSA.

As in would there be a possibility of them being demoted to a normal visitor visa from super visa? i.e. just visit every six months a year?

CBSA cannot demote the super visa to a visitor visa. However they can chose how long they allow your parents to enter on the super visa. This is true for both super visas and TRVs. It's always up to CBSA how long someone is allowed to enter Canada.
