For MEV's, does it mean that you can enter Canada any number of times between the two dates given, or does it mean that you can enter Canada any number of times but you must be out of Canada by the second date?

If it's the former, and you can come back to Canada say, one day before the second date, how long can you stay in Canada for that last visit usually?

Any number of times between the two dates given.

This is up to the CBSA officer to decide.

There is no general rule.

So if you come back a week or two before the expiry date, you could be given a six month duration of stay (which is common)?

You could. Or you might only be issued a short stay (e.g. a few weeks or a month) if the CBSA officer feels you are spending too much time in Canada and behaving like a resident rather than a visitor. Once in a while people are even refused entry.
